Drinking champagne with Mr PJ himself the amazing Monsieur Hervé Deschamps. Hervé has worked at the maison for 30 years and is considered to be one of the best chef de cave in Champagne. The highlight was the beautiful blanc de blanc 02 which was like the perfect complexity which became more wonderful with each sip.
The good was paired wonderfully and the very talented Josh Lopez, who worked at the famous Noma restaurant in Denmark before returning to Brisbane and Goma created a special Belle Époque dish to match the hand painted bottles. A night if floating among the flowers and drinking nectar from God himself will be prominent in my hall of champagne memories.
